About Food For Thought
Founded by Bob Bell in 2012, Food for Thought Denver was created when Bell became aware that many of Denver’s school kids were not getting enough to eat — especially over the weekends. Working with volunteers and their local Arvada Rotary club, they were able to raise enough donated funds to start providing weekend food bags (aka: PowerSacks) to two Denver public schools.
Today, Food for Thought Denver remains a 100% volunteer organization which strives to eliminate weekend hunger — servicing 72 schools in the Denver area. While most of our food recipients qualify for free and reduced breakfast and lunch programs during the school week, many of these kids do not have enough to eat on the weekends. As a result, we have set forth on one simple mission: fill this weekend hunger gap.
Each Friday, individuals, students, and corporate volunteers gather to fill PowerSacks. Each bag contains enough non-perishable food items to feed a family of four for the weekend. The bags are then distributed to the students on Friday afternoons to take home to their families. Our vision is to ultimately live in a community where weekend hunger is no longer a roadblock in a child’s path to success.
Our organization is structured to keep our overhead costs to a bare minimum so we can channel our donation dollars directly to the needs of our student recipients and their families. Since we are a completely volunteer-based organization, we have no employees and pay no salaries. Overhead costs are generously covered by our board of directors and other supporters.
As women, particularly in male-dominated fields, it’s necessary to make your expectations clear, check in often with EVERYONE, and NEVER CRY AT WORK!
I’ve started at the bottom more than once and left at the top a few times as well. I’ll be talking about how clear communication can improve your work experience and satisfaction and even help lift you up for promotion. I’ll provide examples of my own successes and failures and will discuss how the words you use can drive success or create confusion and frustration.
Jennifer was the Executive Director of the Denver Regional Council of Governments (DRCOG) for 13 years, the first woman to be selected for that position with the 62-year-old regional planning agency. In this capacity, she reported to a member board made up of representatives of 60+ city and county members.
An accomplished governmental director, Jennifer has a proven record of leadership and management of large and multifaceted public sector agencies, experience in advocating for legislation and new funding from Congress and the state legislature, and a commendable history of serving the needs and policy direction of elected boards.
At DRCOG, she directed the work of a 98-member staff engaged in long-range planning for transportation and land use, advocacy for the region’s elderly population, and offering services ranging from commuter assistance to the recruitment of fire service personnel.
During her tenure at DRCOG, Jennifer sat on the Advisory Board of the Rocky Mountain Land Use Institute, represented the western states on the National Association of Regional Council’s Executive Director’s Committee, was appointed by both Governors Ritter and Hickenlooper to the Regional Air Quality Committee, was founding member of the Western Regional Alliance, and was a director on the Denver Union Station Project Authority.
A graduate of Nova Southeastern University in south Florida, Jennifer holds a B.S. in professional management and business administration. Now retired, Jennifer just returned to the region after living in Italy and Germany for three years. She is married, enjoys traveling, gardening, cooking, painting and, entertaining family and friends.

With ESG space filled with buzz words and ambitious goals like “New Zero by …”, it can be overwhelming and confusing to discern all the terms and how they all fit together. Ru Schaefferkoetter will try to offer a simple and quick crash course on this topic, including:

- How is TRIDO using innovative technology to tackle the largest Methane source (4 min)
- Carbon Offset and Carbon Credit: the practical, but not very perfect marriage between “Capital” and “Net Zero” (4 min)
Ru Schaefferkoetter is the President and CEO of TRIDO Solutions, a vertically integrated business focusing on methane emission mitigation and carbon management for onshore oil and gas production. Prior to starting her venture, Ru spent 8 years in the oil and gas industry. She also served in the US Army for 4.5 years, including 1 year of combat deployment to Iraq. Ru is a Texas Longhorn with a Chemical Engineer Degree from UT Austin
